Asam keping/gelugur are sliced and dried fruit used as a cooking condiment in Malaysian cuisine. It comes from a large tree that produced Buah Gelugor (Gelugor Fruit) that is native of peninsular Malaysia.
Asam Keping is a widely used in Southeast Asian countries, to make classic dishes such as Penang Asam laksa, sweet and sour curry fish head, f Vietnamese Sour Fish Soup, Pilipino Stew "Sinigang", or Indonesian soup "Sayur Asam".
It can be used for hotpot soup base and noodle soup.
