Chicken & Meat Kerutuk Recipe
Ingredients:
250g Adabi Kerutuk Powder
90-100 pcs or 2500g chicken, beef or mutton
600 ml or 3 cups cooking oil
250g or 10 tbsp 'kerisik' (dessicated coconut paste)
1500 ml or 7 1/2 cup coconut milk (3 1/2 nos)
Blend Ingredient A:
30-35 shallot
15 garlic
Blend Ingredient B:
3-5 inch ginger
15 garlic
3-5 inch galangal
10 sticks lemongrass (pounded)
400g or 1 1/2 tbsp brown sugar or sugar (to taste)
50g or 3 tbsp Asam Jawa X-tra Adabi Paste or
3 tbsp seeded tamarind paste (to taste)
1500 ml or 7 1/2 cup water
Salt to taste
Cooking Instructions:
1. Mix Adabi Kerutuk Powder and Ingredient A with water to become paste
2. Heat oil in a cooking pot
3. Saute Ingredient B and pounded lemongrass until fragrant and slightly yellowish colour
4. Add in Kerutuk paste and saute until fragrant and slightly brown in colour, gently for approximately 10 to 15 minutes
5. Pour in chicken or meat, dessicated coconut paste, coconut milk, tamarind paste, water, brown sugar and salt to taste
6. Cook until thick
7. Ready to serve
