Salted fish bone (often called “ikan masin tulang” or “ham yu guat” in Cantonese) is the salt‑cured backbone of larger fish — usually mackerel, tenggiri, or threadfin. Instead of the whole fish being salted, only the spine + attached meat is preserved. This creates a very intense, savoury ingredient used in small amounts to boost flavour.
Penang salted fish has a reputation that goes way beyond “just being salty.” It’s considered one of the most flavourful, aromatic, and high‑quality versions in Malaysia because of how it’s made, where it’s made, and the culture behind it.
