- Make your own Penang Assam Laksa noodle soup

Malaysia is the birthplace of some very distinguish laksa and Penang Assam Laksa (or Penang Asam Laksa - "Asam" with a single "s") is one of the top favourite among Malaysians. While laksa is most commonly served with curry soup base, Penang Assam Laksa which originated from the Penang state of Peninsular Malaysia is served in a tamarind flavoured soup base and hence the name Assam Laksa, which directly translate to Tamarind Laksa (assam or asam is the Malay word for Tamarind).

Penang Assam Laksa noodle is commonly served with mackerel (poached and flaked), julienned fresh cucumber and tiny sliced pineapple in the tamarind soup base then topped with spearmint, vietnamese mint, and sliced torch ginger flower. The soup base is made of lemongrass, turmeric, chilli and galangal among many other herbs and not forgetting tamarind which gives the soup a sour taste (the main distinguishing feature of Penang Assam Laksa noodle soup)
